Called bavette d'aloyau in France, this fan-shaped cut is an extension of the T-bone and Porterhouse on the short loin. Bavette is a highly flavourful, loosely textured flat cut of meat taken from the abdominal muscles of the cow and must not be mistaken for Skirt Steak.
